Cool Weather Comfort Food

  Cooler weather is a good excuse to break out the comfort food.   Graupensuppe is a great example. Graupensuppe is German in origin.   It is barley soup made with rich stock, fresh house made bratwurst and bacon, and root vegetables.     It is a complete one pot/ one dish meal. Mahi Mahi with Vegetables

  Mahi-mahi with glace and vegetables.   Seared Riverence , wild caught, Ecuadorian Mahi-Mahi, glace from white stock, carrot, green bean, potato. A match made in gastronomic heaven.    In the spirit of variation on a theme… I did this previously with glace made from roasted pork stock. It worked well. Mahi Mahi with Vegetable

 Sautéed mahi mahi with vegetables. Wild caught, Ecuadorian mahi mahi, sautéed; carrot; green bean; red potato and daikon. Roast pork glace.  The roast pork glace was an interesting sauce for this dish. It was strong but was balanced out nicely by the vegetables and fish. An ultra rich dish!  Thank you Riverence for the great mahi mahi to use in this dish. Got to get back to the Islands

Island time. Wild caught Ecuadorian mahi-mahi, kale and coconut. Mahi-mahi poached in coconut milk with onion, ginger and vanilla, steamed kale, Thai basil and pepper threads. I like this dish better with fried onions on top. Still a couple of more versions of this dish to come. Tuna on Gazpacho

Tuna in an Adobo (Spice Paste) from Extremadura, on Gazpacho.   This recipe was adapted from a pork loin recipe.   This was an exceptional dish for the hot weather we have been having! Summetime and the living is easy.

"Summertime and the living is easy.”   Or so goes the song.   As hot as this summer has been, it is nice to have a meal that requires only one pan and is quick to prepare.   I have previously prepared this dish using Steelhead Trout but wanted to make it with tuna.   Tuna is a part of Spanish cuisine and Steelhead trout is not. The tuna loin was simply seasoned with salt and pepper and saut é ed.   The next rendition will use an adobo spice rub from the Extramadura region. Confit chicken thigh with white beans and fried onion

 Confit chicken thigh with white beans and fried onion. The more we learn about food the more often we see variation on a theme.   Such is the case of this chicken thigh confit.   It is based on a recipe that was used for smoked chicken thigh confit.   The original recipe works very well.   But this version is so down right tasty, I don’t even bother to smoke the thighs. I am fan of serving boneless confit.   The thighs were cooked and chilled according to traditional practices.   When ready for service, I removed the bone, heated the confit and crisped the skin.   I am not sure if I like the garnish of lightly fried onions better than shoestring potatoes cooked in confit fat.   They are both very nice.   The onion is a little lighter.   But then again, I fried the onion in canola oil and not confit fat.   I think next time for “experimentation purposes only”, I will fry them in confit fat and see if that makes the difference! Capellini with Vegetables

  Along the way this delightful vegetarian dish showed up.   And it wasn’t even Meatless Monday!    Capellini, olive oil, caramelized onion, garlic, mushroom, cherry tomato, green pea and basil.   This dish was a staple with us a few years back.     It has been a while since we saw it.   I am really glad we revisited this dish.   It is relatively light; and it is a delightful change of pace from some of the heavier sauces.
