Fun with Roe

Rainbow trout roe on blini with sour cream, minced red onion, and capers. Roe is often thought of as being only useful for garnishing a dish. It may be time to change the narrative. This rainbow trout roe is delightful. It has a very nice crisp texture and delightfully fresh flavor. I am looking forward to incorporating it into a few more dishes.  Thank you, Riverence , for the great roe to work with. Wild-caught Ecuadorian mahi-mahi poached in coconut milk with onion, ginger, and garlic. Served on forbidden rice and steamed spinach. Rainbow trout roe with Thai basil. Chili oil. What a great meatless Monday dish! Fish Mousseline

 Fish mousseline with toast, salad, and horseradish. Mixed fish mousseline (rainbow and steelhead trout); toasted, house baguette; cucumber salad with cream horseradish sauce. Mousseline is versatile which makes it fun to “play” with.   For this plate, it was served cool, instead of hot. Tuna on Gazpacho

  Tuna on Gazpacho. Tuna in an Adobo (Spice Paste) from Extremadura, on Gazpacho.   This recipe was adapted from a pork loin recipe.   This was an exceptional dish for the hot weather we have been having! Tuna Loin with Asian Influence
