  Tuna Loin with Asian Influence. Tuna loin seasoned with Nori Komi Furikake and seared.   Golden, kelp stock; mung bean sprouts; mushroom; and carrot.      Very light dish.   Nice textures and flavors.   Still a work in progress… Thank you, Riverence for the great fish to use for this dish. Summetime and the living is easy.

"Summertime and the living is easy.”   Or so goes the song.   As hot as this summer has been, it is nice to have a meal that requires only one pan and is quick to prepare.   I have previously prepared this dish using Steelhead Trout but wanted to make it with tuna.   Tuna is a part of Spanish cuisine and Steelhead trout is not. The tuna loin was simply seasoned with salt and pepper and saut é ed.   The next rendition will use an adobo spice rub from the Extramadura region. Texas Comfort Food! Most of us know about the delightful combination of cream gravy and fried chicken.   How the salt and pepper seasoned crispy crust of the chicken interacts with the smoothness of a well-made cream gravy seasoned with salt and black pepper.   It is truly a delightful match. As much as I enjoy this combination, I wanted to take it up a notch.   I had just finished making a batch of house made breakfast sausage.   I had stuffed the sausage into casings.   As is always the case, there was some sausage left in the stuffer.   Breakfast sausage is good sausage to make during the summer.   It is a fresh sausage.   It does not need any curing time and is not cold smoked.   Not wanting to lose the sausage left in the stuffer, I started thinking about what to do with it.   The first thing that came to mind was biscuits and sausage gravy.   Yes!   Thank you!   A delightful treat on its own.  Confit chicken thigh with white beans and fried onion. The more we learn about food the more often we see variation on a theme.   Such is the case of this chicken thigh confit.   It is based on a recipe that was used for smoked chicken thigh confit.   The original recipe works very well.   But this version is so down right tasty, I don’t even bother to smoke the thighs. I am fan of serving boneless confit.   The thighs were cooked and chilled according to traditional practices.   When ready for service, I removed the bone, heated the confit and crisped the skin.   I am not sure if I like the garnish of lightly fried onions better than shoestring potatoes cooked in confit fat.   They are both very nice.   The onion is a little lighter.   But then again, I fried the onion in canola oil and not confit fat.   I think next time for “experimentation purposes only”, I will fry them in confit fat and see if that makes the difference! Steel Head Trout On Middle Eastern Style Salad

 Favorite dishes. We all have them. You know, the dish we go back to time and time again.   This is one of mine. Steel head trout on a room temperature Middle Eastern style salad. Sautéed Riverence Steel head trout seasoned with Za'atar, on room temperature salad of Pearl couscous, cucumber, feta cheese, tomato, kalamata olive, roasted pine nut, pepperoncini peppers and mint (olive oil and lemon).   This was served with Nan E-barbari (not shown).   Simple and perfect. #LifeLongLearning #LifeLongTeaching #FamilyFood #Riverence #USATrout #SteelHeadTrout  As always your questions or comments are welcome.
